Easy Vegetarian White Sauce Pasta



🌟Fam favorite🌟

Ingredients:

Sea Salt for better flavor(but use any salt)

Fusilli/or any pasta.

1-2 Cups Frozen vegetables.

1 Onion

3 Garlic cloves

3 tbs Butter

3 tbs all purpose flour

1-2 cups Milk

3 tablespoons Cream cheese

1-2 cups of freshly grated **cheddar cheese mild/medium 

or mature.

**Could also use a gruyere and cheddar mix. Yum. 

Feel free to personalise with your favorite cheese. 

But I used mild cheddar. 

I wouldn’t add mozzarella bc the consistency is different.

Spices:

1/2 teaspoon Oregano

Pinch of Black pepper

1/4 teaspoon Chili powder

1/4 teaspoon turmeric


Pasta:

•Fusilli pasta boiled with 3 tablespoons of sea salt and oil

(to keep from sticking)

Make sure water is salty. Cook until al dente. 

Drain out water and then keep back in pot. 

Add butter to keep from swelling while it’s waiting.


Veg:

•in Dutch oven pan or skillet, on low, add cooking oil, 

when warm, add diced onions.

Sautee on low medium, and when onions turn translucent,

add some salt. 

Then raise heat to medium and begin to brown the onions. 

Once onions are starting to brown, lower heat to low, 

add garlic, oregano, and chili/turmeric spices.

Stir all together. Then add in vegetables. 

Now raise the heat since the vegetable were frozen. 

And sautee them with the onions. 

You want them to get the flavor from the onion and garlic, 

so if they get a little brown that’s fine, but they probably 

wont. Just make sure they are cooked through 

and then turn heat off.


White sauce/bechamel:

•Now, for the sauce,

Use a separate deep pot,

Turn on low, add butter. 

When butter is melted, add flour. 

whisk together then turn heat up a bit to medium, 

whisk whisk whisk constantly.

When it turns light brown and it’s thickened, 

(takes 2-4mins) 

add milk slowly, bit by bit not too much at once. 

Whisk each time you add in the milk so it won’t clump.

Only add enough milk to make it smooth not runny. 1-2cups

Keep adding milk until it’s all mixed and smooth, not thick. 

Continue to cook it on low for a few minutes whisking. 

Then add in grated cheese and cream cheese.

Whisk until all melted. 

It shouldn’t be very thick, and it shouldn’t be liquidy either.

It should be a sauce consistency-not milky.

When it’s all a nice consistency,

turn off heat. add in pepper and salt.


Final step: 
•Now add the pasta to the veg, stir, 

then add the white sauce to the pasta and veg 

and stir together. 

All done.


Optional: Add sliced, (salted and peppered)

cherry tomatoes+yellow tomatoes for an extra level of yum.


keeps in the fridge for a few days.

Simple ingredients, but very delicious.
